This easy and delicious cheddar broccoli soup is a doctored version of Bear Creek Cheddar Broccoli Soup mix. It is rich, yummy, and delicious. It reminds me of the Jason’s Deli broccoli cheese soup, which is likely far more fat laden than this soup. I use 1/2 water and 1/2 skim milk to keep fat grams to a minimum, but the soup still tastes rich and creamy.
This Bear Creek Cheddar Broccoli Soup Mix is the secret foundaton for this yummy soup. The packets are found in the soup aisle of most grocery stores. The original recipe calls for just adding water; my version is tweaked a bit by adding skim milk and fresh broccoli.
If you don’t have an immersion blender, you may not want to add the broccoli (unless you don’t mind chunks). The photo of the soup before blending shows the chunks of broccoli. With a few seconds of hand blending, the soup goes from thick and chunky to smooth and creamy.
I absolutely love my Cuisinart immersion blender. I use mine mainly for soups, but it can be used for smoothies, shakes, baby food, etc……This savvy hand held appliance is something I couldn’t do without.
