How To Cook Pork Chops Without Drying Them OutHow

Pork chops can be fork tender and moist if you follow a few guidelines and cook them properly. Here are a few tips for cooking moist, tender pork chops.

  • Buy bone-in pork chops.
  • Brine for 12 hours in buttermilk + kosher salt.
  • Bring the meat to room temperature before cooking. …
  • Start them on the stove; finish them in the slow cooker or Instant Pot.
  • Cook them in a prepared or homemade barbecue sauce to keep them moist. …
  • Let the pork chops rest or “set” 

How to brine pork chops.

Chill the buttermilk brine completely in the refrigerator before adding the pork chops. . Rinse pork twice after removing it from the brine solution; discard brine. If you are not ready to cook at the end of the brining time, remove and rinse the meat.

For a delicious weeknight meal, pork chops are always a great choice. If you love barbecued meat, this recipe is a winner, and it couldn’t be easier. You simply need pork chops, EVOO for searing, and 2 BBQ seasonings~wet sauce and dry rub. The dry rub gives a great sear that tenderizes the chops and seals in juices. The wet sauce keeps the chops tender during cooking so that they don’t dry out.

What is Dreamland Barbecue Sauce?

Dreamland BBQ sauce is vinegar-based and has a touch of heat (and no sweet). This is one of my favorite BBQ sauces, and it is what I use for this recipe. You can certainly substitute your favorite BBQ dry rub and BBQ wet sauce.

Cook these pork chops in the Instant Pot

I love cooking meat in my Instant Pot, as pressure cooking makes the meat fall-apart tender. I almost always sear my meat (roast, chops, chicken, etc…) in a skillet before finishing in the Instant Pot. This gives the meat a good browning, and the drippings from the oil/fat add huge flavor.

Which Instant Pot is best?

I have the Instant Pot Duo60. It is one of the most popular models along with the LUX60. Both the instant pots are multi-cookers, which simply means they perform many functions (i.e. saute, slow cook, etc…)  The Instapot DUO60 is a 7-in-1 cooker; the  LUX60 is a 6-in-1 cooker. Also, DUO60 is a yogurt maker while LUX60 isn’t. Instapot DUO60 has 14 built-in programs while LUX60 has only 10. I link below to both of these models.

C0ok the pork chops in a slow cooker.

These cook perfectly in a slow cooker in about 4-5 hours on low or 6-7 hours on high, depending upon how many chops you are cooking. The thicker ones take longer. My favorite size is 1/2″ to 3/4″~always bone-in. Bone is better~hands down! The slow cooker chops will not be caramelized, so if you want that outcome, just place it under the broiler for a few minutes (watching carefully).

Serving suggestions: My youngest likes these chops with mashed potatoes (for quick & easy, I use Simply Potatoes Sour Cream & Chive), simple creamed corn, and Mississippi green beans. Comfort food that hits the spot but can be thrown together quickly and easily!

Fall-apart-tender pork chops with yummy Dreamland seasoning and sauce!

Ingredients

  • 6 bone-in pork chops (1/2" thick)
  • 3 TB Dreamland Bar-B-Que Seasoned Shake Dry Rub
  • 1 cup Dreamlands Bar-B-Que Sauce
  • 2 TB extra virgin olive oil

Instructions

  1. Sprinkle pork chops liberally with dry rub on both sides; rub in with fingers.
  2. Heat EVOO in skillet until hot.
  3. Sear pork chops until golden on both sides.
  4. Finish cooking in the Instant Pot or slow cooker (below).

Instant Pot

Pour a thin layer of sauce in the bottom of the Instant Pot. Add chops; pour more sauce to taste. Set to high pressure for 30 minutes After pressure cooking, allow for slow release before opening the lid (roughly 30 more minutes).

Slow Cooker

Cook on high for 4 hours or low for 7 hours.

  1. Hi Shana! IP settings can be confusing. If you like pork chops to be “just done” and more firm, I suggest pressing manual and then 10 minutes. If you like fall off the bone fall apart (that’s me), then the meat setting will be fine. Also, you can saute the chops on saute in the IP if you want to. Please let me know how you cook them and how they turn out. Happy 2018 to you!!

  2. Just a little confused about the settings … after I press ‘meat’, do I then select high pressure or low? … either way, the pot decides on 35 minutes … sure hope I don’t overdo them …

  3. Hi Brian! You will LOVE your IP!!! It is a bit tricky to figure exact time with a pressure cooker, but basically the pressure is roughly the specified time, but release and “keep warm” can add to that time. I need to go back and read my manual again for claification, but basically you CAN have your food ready to eat in the specified amount of time~maybe plus 10 minutes or so. Hope this helps!!!

  4. Thanks for posting this recipe. I just got an instant pot and I’m experimenting with it. Was the 20 mins from start to finish, including warm up and release? I want to make sure I don’t overcook.
