Beef stroganoff is a classic Russian dish which consists of small bites of beef in a sour cream sauce. This recipe uses ground beef in place of beef tips. It is a yummy comfort meal that can be made in less than 30 minutes.

If you prefer the traditional beef tips rather than ground beef, the substitution will work just fine. My kids just prefer the ground, so this is our go-to version.

Do Ahead Tips:  This is a great recipe to make ahead and freeze. Don’t worry about the sour cream~since it is mixed with the other ingredients, it freezes well with with no problem. Just be sure to seal it in a freezer bag with all air removed. When ready to cook, simply defrost just enough to break apart the meat to place in a skillet. Reheat the rest of the way on the stovetop while the egg noodles are cooking. You’ll have a meal in minutes!

A hearty, savory ground beef sauce served over egg noodles.

Ingredients

  • 2 pounds ground beef
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 (8-ounce) package sliced mushrooms
  • 3 garlic cloves, minced
  • 1 (14-ounce) can beef broth
  • 1 envelope brown gravy mix
  • 2 TB dry ranch dressing mix
  • 1 can condensed cream of mushroom soup
  • 1/2 cup sour cream
  • salt & pepper to taste
  • paprika to garnish (optional)
  • 1 (16-ounce) package egg noodles, cooked al dente

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat.
  2. Drain meat; sprinkle with ranch dressing mix, salt & pepper.
  3. In another skillet, melt butter; sauté onions and mushrooms until tender, adding garlic at the end.
  4. In a small bowl, whisk the broth, gravy mix, and mushroom soup.
  5. Stir in the sour cream and the cooked ground beef.
  6. Reduce the heat to a simmer and cook until the sauce thickens (10 minutes).
  7. Serve over hot egg noodles.
