King’s Ranch Chicken Soup

King’s Ranch Chicken Soup is a cheesy Tex-Mex soup version of Ro*Tel’s signature King Ranch Chicken Casserole.

This is the perfect time of year to enjoy a rich, cheesy soup, and this one fits the bill. It is a soup version of the popular King’s Ranch Chicken Casserole that is Ro*Tel’s signature dish.

This can be made in less than 30 minutes if you use rotisserie chicken, but I like to bake my own. I actually use several dashes of my favorite Penzey’s seasonings to the chicken to make it super flavorful before adding to the soup. I use Penzey’s Fajita Seasoning and Arizona Seasoning to season chicken that will be used for any Tex-Mex dish.

The great Tex-Mex flavors of King's Ranch Chicken~in soup form!

Ingredients

  • CHICKEN:
  • 2-3 chicken breasts
  • 2 TB extra virgin olive oil
  • 2 tsp Southwest Seasoning (I use Penzey's Arizona or Fajita Seasonings)
  • SOUP:
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 2 cans Rotel tomatoes
  • 5 cups chicken broth
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 8 oz Velveeta, cubed
  • corn chips for garnish
  • shredded cheddar for garnish

Instructions

  1. CHICKEN:
  2. Preheat oven to 400 degrees.
  3. Drizzle chicken with extra virgin olive oil; sprinkle with Southwest Seasoning.
  4. Cover loosely with foil; bake 45 minutes or until internal temp registers 165 degrees.
  5. Chop chicken into small pieces; set aside.
  6. SOUP:
  7. In Dutch oven over medium heat, whisk together soups and broth.
  8. Add chicken, Rotel tomatoes, onion powder, chili powder, cumin, garlic powder & black pepper.
  9. Bring to a boil; reduce heat until soup simmers.
  10. Simmer soup for 15 minutes.
  11. Add Velveeta, stirring occasionally until melted and blended into soup.
  12. Serve soup in bowls, garnished with corn chips and shredded cheddar.
