This is one of my go-to meals for quick & easy weeknight dinners. It is a hit with all of my fam, and I never have any left over. We love savory & spicy, so this dish fits the bill. We love serving this with rice, which of course doesn’t fit the Paleo guidelines. But we’ve enjoyed this without rice and are amazed at how filling and satisfying this dish is!

Sausage: I’ve used all kinds of sausage for this dish but hands down prefer hickory smoked Conecuh sausage. The healthier chicken and turkey sausage options are good, but for the richest, most savory flavor, Conecuh is hard to beat.

Make ahead: Cut peppers and onions into chunks. Cut sausage into 3-4″ pieces. Store in ziploc bags in the fridge.  Place shrimp (if frozen) in a bowl to begin thawing.

Skillet Options: I often use this 15″ cast iron skillet. It is huge, but it is perfect for one skillet meals like this one (or ginormous cobblers or crisps:-).

If using non-stick, I use this T-Fal jumbo nonstick skillet. It is a wonderful, budget savvy all around skillet that can be used for myriad dishes. I have two of these and use them all the time. The glass lid is wonderful for covering food so that it will cook or steam more quickly. They are currently marked down to $14.99 and ship prime.

Shrimp & Sausage Paleo Skillet Meal

Ingredients

  • 4 TB extra virgin olive oil (divided into 2 TB each)
  • 1 lb of medium shrimp, peeled and deveined
  • 8-10 oz. cooked link sausage (I use Conecuh), cut into 2-3" pieces
  • 2 cups diced peppers (red, yellow, green, or orange)
  • 1 medium yellow onion, diced
  • 1 medium squash or zucchini, diced
  • 3-4 garlic cloves, diced
  • Salt & pepper to taste
  • Pinch of red pepper flakes
  • 1 TB Old Bay Seasoning
  • 1 TB Cajun seasoning

Instructions

  • Heat 2 TB EVOO in large cast iron skillet.
  • Saute sausage until brown; remove and set aside (leave grease & sausage bits in skillet).
  • Sprinkle shrimp with Old Bay; saute in skillet until just done. Set aside.
  • Add 2 TB EVOO to skillet; heat until mediurm-high.
  • Add peppers, onion, squash or zucchini; sprinkle with salt, pepper & Cajun seasoning.
  • Saute veggies until just crisp tender, tossing in garlic towards the end.
  • Add sausage and shrimp. Continue cooking for a few minutes, stirring well.
  • Serve.
