BBQ Sweet Potatoes for the Cold Weather

These BBQ sweet potatoes are the perfect side dish for a gathering with friends or an addition to a family meal! This side dish is perfect if you want to spice up your meal rotation!

This meal is absolutely perfect for fall!  As it is getting a little cooler outside and football season is in full swing, this dish combines cozy and delicious with efficiency and ease. Your friends and family will love this easy and protein-packed BBQ dish!

What goes well with BBQ chicken and sweet potatoes?

Since this meal has a lot of good protein and starches from the chicken and the sweet potatoes, the best side to add to BBQ chicken is vegetables. Any roasted veggie would be SO delicious, but I recommend adding Brussel Sprouts as a side to this dish. But since this dish has it all, adding a side into the mix is not required! It is so satisfying and yummy without one. 

How long do you cook BBQ chicken?

Once you seal the BBQ chicken in foil, you should bake it at 400F for about 40 minutes. Once it cools down, it is ready to be shredded and added to the rest of this dish. Amazingly, the sweet potatoes take about the same time to cook as the chicken. So if you pop them in alongside the chicken, everything will be ready to go simultaneously. SO convenient!

What toppings should I add to BBQ chicken?

Besides adding the BBQ sauce, there is an abundance of toppings that you can add to this dish. These BBQ chicken sweet potatoes are kind of like loaded potatoes and can have a big variety of toppings. For example, you can add some sour cream, top on some veggies, or you could just leave it as is. Luckily this dish has plenty of flavor and fun without any extra toppings! You might be surprised by just how delicious this combination is!

What makes this chicken BBQ chicken?

What makes this chicken BBQ chicken is that it is seasoned with a smokehouse rub before cooking and then once it is finished cooking, I smother it in a delicious BBQ sauce. For the smokehouse rub, I use the William Sonoma Smokehouse Rub which has applewood smoked sea salt and an herb blend. For the BBQ sauce I use after cooking, I use the Sticky Fingers Ribhouse sauce. This BBQ sauce is so delicious and is a game changer, you are going to love it paired with this chicken!

What cut of chicken should I use for BBQ chicken?

For this recipe, I recommend using a standard chicken breast. For the serving sizes, I would say about one breast per person. So, if you have a family of four to feed I would recommend using both four chicken breasts and four sweet potatoes. Though this recipe would work with other cuts of chicken, chicken breast is what I recommend best for this recipe. 

Is BBQ chicken healthy?

Standard BBQ chicken? Maybe not. This one? Absolutely! This dish makes BBQ chicken so simple and so delicious. Without using extra oils or fryers, you can create this flavorful and nutritious meal. This dish also goes without the extra carbs and keeps it nutritious. This recipe is guilt-free!

What can you do with leftover BBQ chicken?

There are so many things you can do with leftover BBQ chicken. For one, you can use it on top of a personal pizza, add it to a salad, or make a repeat of this same meal. You can always add protein to almost any dish, and using your leftovers is always such a good way to do that. Since this dish is so delicious, I can’t imagine you will have any leftovers at all, but it is good to be prepared.

BBQ Chicken Sweet Potatoes

Ingredients

  • Smokehouse Rub
  • Salt & Pepper
  • BBQ sauce
  • Chicken breasts

Instructions

    1️Season the chicken with your favorite seasoning. I used @williamssonoma Smokehouse Rub with kosher salt and pepper.
    2️Coat the chicken in BBQ sauce. I used @stickyfingers_ribhouse sauce.
    3️Seal them with foil and cook at 400F for about 45 min
    4️Let sit for about 15 min to cool before shredding the chicken
    5️Once chicken is ready, pile the chicken and BBQ sauce on the potatoes and enjoy!
