My kids think this is the best EVER chicken noodle soup, so this is my go to recipe when we crave comfort food in a bowl!
Update: One of my girls just told me that this soup is VERY salty, so you might want to adjust seasonings. I am a salty/spicy kind of gal, but be aware as you make this in case you want to moderate.
I’ve made myriad versions of chicken soup, and this is my family’s favorite. It is rich, savory, and so yummy. It can be made with any pasta~ditalini and egg noodles are pictured here~or with rice. It is so easy to adjust this to your family’s tastes.
This recipe isn’t hard at all; literally anyone can make this. The chicken used in the egg noodle version was cooked from frozen. I sautéed frozen chicken tenderloins in EVOO in my favorite skillet, covering them occasionally to “steam” the chicken and cook it more quickly. The chicken cooked in less than 20 minutes.
The soup made with ditalini pasta has pulled rotisserie chicken from Costco. It comes packaged in large airtight bags, and it makes it super easy to whip up wonderful soups or chicken dishes (like this yummy chicken tetrazzini). I always grab a package of this chicken whenever I am at Costco.
Seasoning: Whether I cook or use rotisserie chicken, I season it well. I love to use Cavender’s Greek and Zoe’s Spice of Life. I sprinkle it on the chicken before adding it to the slow cooker or Dutch oven.
