When I baked the chicken, I seasoned it with salt, pepper, and garlic powder. Once I drained the pasta, I tossed it with extra virgin olive oil and a little bit of garlic salt. Some tips that will help you with this dish! First of all, I baked my chicken breasts in the morning and chopped/refrigerated them until I began making the dish. Secondly, I chopped a head of cauliflower and placed it in a bag in the fridge. I used about half of it for this recipe, you only need a cup and a half for the recipe. Finally, another thing I did to make this recipe faster was that I grated the fresh parmesan ahead of time.

Ingredients

  • 1/2 head (about 1-1/2 cups) chopped cauliflower
  • 1 lb (1-1/2 cups) cooked chicken, chopped into cubes
  • 1 (15-oz) jar Rao's Homemade Alfredo sauce
  • 1/4 cup chopped parsley
  • 1/2 cup freshly grated parmesan

Instructions

    Preheat the oven to 350 F.

    Place all ingredients in a bowl; stir until combined.

    Spread in a baking dish sprayed with avocado oil.

    Bake 45-50 minutes or until bubbly.
