Cheesy beef & noodle bake is a hearty dish that is easy, yummy, and perfect to make ahead and freeze.

This hamburger casserole is super easy to throw together for a busy weeknight meal. With a simple green salad and rolls, this will make a hearty and satisfying dinner.

Make ahead: This is a perfect freezer dish to make, freeze, and pull out when needed. Just make per directions up until the point of baking. Wrap well and freeze. When ready to bake, thaw (overnight is best) and cook at 350 degrees until bubbly. If partially frozen, cooking time will take longer.

We usually have leftovers, and this reheats and tastes great the next day. I pack it in individual microwaveable containers for grab & go school lunches.

Hearty and satisfying, this is a comfort food meal sure to please!

Ingredients

  • 1 to 1 1/4 pound ground beef
  • 1 jar spaghetti sauce (I use Bertolli)
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon Italian seasoning
  • black pepper to taste
  • 8 ounces egg noodles, cooked al dente
  • 1/2 cup sour cream (I use reduced fat)
  • 1 to 1 1/4 cup cottage cheese
  • 1/2 cup sliced green onions
  • 1 cup grated cheddar cheese
  • fresh parmesan for sprinkling on top

Instructions

  1. Brown ground beef and green onions.
  2. Drain fat, and season with salts, Italian seasoning and black pepper.
  3. Add spaghetti sauce; simmer on low while preparing other ingredients.
  4. In a medium bowl, combine the sour cream & cottage cheese, stirring until blended.
  5. Add egg noodles to the cheese mixture, stirring well.
  6. To assemble casserole, layer as follows:
  7. Spread half of the cheese/noodle mixture in a baking dish.
  8. Top with half the meat mixture, then half of the grated cheddar.
  9. Repeat with a second layer of cheese/noodles, meat mixture, and remaining cheddar.
  10. Sprinkle fresh parmesan on top.
  11. Bake until bubbly, roughly 25 minutes.
