Chuy’s is a wildly popular restaurant chain that serves authentic Tex-Mex food. They have several signature sauces, one of which is the Boom-Boom enchilada sauce.

Chuy’s signature enchiladas are described on their menu as follows: Freshly-roasted, hand-pulled chicken & cheese with Boom-Boom sauce, made with cheese, roasted New Mexican green chiles, tomatillos, green onions, cilantro and lime juice.

How to make Chuy’s Boom Boom Enchiladas at Home

You’ll find myriad “copycat recipes” for the boom boom sauce online. I choose to buy the REAL Boom Boom sauce AT CHUY’S! If you didn’t know they sell it, consider this your tip of the month!!! You can even call ahead, and you can tell them exactly how much sauce you want!!!

How much Chuy’s Boom-Boom Sauce Do I Need?

If you want to make my party-sized recipe (which serves 25-30), I suggest buying 2 pints. You can buy less, but I love having extra. For a family size (10-12 servings), I would get a pint.

My Favorite Tortillas for Enchiladas

Trader Joe’s has corn/wheat blend tortillas, and they are FAB!  They stay together when rolled without tearing like some do.

What cheese do you use for Boom-Boom Enchiladas?

The sweet lady at Chuy’s who rang up my sauce gave me a FAB tip~use pepper jack cheese!!! She told me that it is what they use at the restaurant, and it adds a great kick. I LOVE pepper jack and often use it in other recipes as well.

How to Make Chuy’s Boom Boom Enchiladas A Day Ahead

If you make these for a party, it is SO nice to get the prep work done the day before. Just make them up to the point of baking (but don’t). Keep them in the fridge until the next day. You can also make them a few hours before your party and just keep them in a warm oven until guests arrive.

Since enchiladas are hand rolled, no one person makes them exactly the same way LOL! I put my general measurements and instructions below, but use your preferences to make them how you like them.

Chuy's Boom Boom Enciladas at Home (the REAL sauce makes then authentic)!

Ingredients

  • 2 cups chopped cooked chicken
  • 2 pints Boom-Boom sauce (from Chuy's)
  • 2 cups pepper Jack cheese, shredded
  • 2 cups Mexican blend cheese, shredded
  • 1 cup tomatillo salsa (green or hatch chili salsa)
  • 12-14 tortillas corn or corn/flour blend

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray baking dishes or pans with cooking spray.
  3. Spread thin layer of Boom-Boom sauce on bottom of each pan.
  4. Lay out tortillas on foil or parchment.
  5. Place 2 TB each of chicken and pepper jack on each tortilla.
  6. Roll tortillas and place atop sauce in baking dish.
  7. Pour Boom-Boom sauce over tortillas; sprinkle with reamining cheese.
  8. Cover and bake 20 minutes until warm throughout.
  9. Uncover; bake 5 minutes if necessary to finish melting cheese.

  2. Hi Pamela!! I just edited the recipe to clarify. Tomatillo sauce is basically green chili/hatch salsa. You just pour it over at the end! I hope you enjoy this recipe!!

  6. Hi Miranda! I’ve never omitted the tomatillo! That is a major ingredient in the enchiladas, though, so I’d guess it would change the end result considerably. Let me know if you try it and how it turns out!
