Making tender, juicy, delicious chicken does not have to be complicated or time-consuming. Not only are these Chili Lime Chicken Thighs succulent and delicious, but they are also unbelievably simple. You will not believe how only five ingredients can pack such a punch of flavor! I love to make these when I am pressed for time but I still want to make a fantastic protein for lunch or dinner. Additionally, these Chili Lime Chicken Thighs make a phenomenal meal prep! 

How Do I Get Delicious Chicken With Only Five Ingredients? 

Do not let the minimal ingredient list fool you – this chicken is absolutely packed with flavor! The secret to this recipe lies in the chili lime seasoning. Trader Joe’s signature chili lime seasoning is one of my favorite seasoning blends, and it is what makes this chicken so delicious.

Do I Have To Use Trader Joe’s Chili Lime Seasoning Blend?

Compared to other similar blends, Trader Joe’s chili lime seasoning is heavier on the chili. While Trader Joe’s blend is my personal favorite, you can also use Tajin chili lime seasoning as a substitute. 

Can I Use Chicken Breasts? 

Chicken breasts or tenders would also be delicious cooked with the same method. However, I love using skin-on chicken thighs because they make this dish crispy and incredibly succulent. 

Are Chicken Thighs Unhealthy? 

While chicken thighs can get a bad rap for being higher in fat than chicken breasts, they are an excellent protein source. They are slightly higher in fat than chicken breasts, but this makes them much richer in flavor and crispier in texture. Since this recipe only calls for a small amount of extra fat in the EVOO, it is a very healthy and balanced meal. Additionally, chicken thighs have a higher concentration of zinc and iron than white meat chicken. 

How Do I Make This Dish? 

To make Chili Lime Chicken Thighs, start by drizzling the chicken thighs with good quality EVOO in a large baking dish. Secondly, season the chicken with salt, pepper, and Trader Joe’s chili lime seasoning (or Tajin). Next, rub the seasoning well on both sides. After that, take uncovered at 400F for about 40 minutes or until the chicken reaches an internal temperature of 165 F. Finally, let it sit for about 15-20 minutes, and enjoy!

How Should I Serve Chili Lime Chicken?

Once you have made these Chili Lime Chicken Thighs, all you need is a side dish or two and dinner is ready! I love to serve these with a green side like my Green Beans With Shallots or my Kale Ceaser Salad. It also goes great paired with my guacamole recipe and tortilla chips!

  • 2 tblsp EVOO
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1 tbsp Trader Joe's chili lime seasoning (or tajin)
