Reese’s Peanut Butter Cups are divine, but there’s nothing healthy or natural about them. Although they taste fab, they are highly processed.
These peanut butter cups with coconut oil are my favorite way to satisfy a chocolate/peanut butter craving. They are so rich that a just a small bite feels like I’ve had a majorly decadent dessert. The coconut oil gives them a hint of coconut flavor that is wonderful but not overpowering.
These don’t freeze into rock hard hockey pucks but are the perfect consistency pulled directly from the freezer. You can cut one in half or eat it right out of hand, no need to thaw one bit.
Coconut Oil: We love coconut oil and have been trying to implement more of it into our diets. We put it in our coffee in the mornings and use in recipes like this. Costco has wonderful coconut oil. I recently bought some at Publix (Spectrum brand) and returned it. It didn’t look, taste, or smell like the coconut oil that I love from Costco.
The prep time on these is quick, but the peanut butter and chocolate portions have to be layered and frozen separately. This takes a few hours, so plan accordingly if you want to serve these at a specific event.
