Of all the veggies to choose from, you will not be disappointed with cauliflower. It has all of the health benefits and the delicious taste and versatility.

Turmeric is so good for you, and many people don’t know all of the benefits it has! For one, turmeric is an anti-inflammatory and an antioxidant. It is also said to lower the risk of many different illnesses, as well as lower your cholesterol. The compound of turmeric that makes it so great is curcumin. This compound is the part of turmeric that provides so many health benefits and appears as that bright orange powder. Black pepper helps these antioxidants to work better, this recipe includes both for maximum health benefit! Many people often leave out turmeric from their spice cabinets. ABSOLUTELY! This dish is so great gently reheated. If you have some curry turmeric cauliflower left over from your meal, do not shy away from reheating it for your next meal. This also means that this side is super easy to make ahead of time. Since it reheats so well, you can cook it as normal and heat it up for whenever you serve it. 

Why roast cauliflower?

For this recipe, you should roast the cauliflower until it begins to brown and gets crispy. I LOVE a good roasted vegetable and if the cauliflower was cooked in a different way it wouldn’t have that amazing crispiness that roasted cauliflower has. The other methods of cooking just don’t have the same effect. For me, roasting is the way to go!

Can you make curry turmeric cauliflower from frozen cauliflower?

While I recommend using fresh cauliflower in this recipe, it is possible to use frozen when in a pinch. The recipe would stay virtually the same but you would need more cook time to get this dish to the desired crispiness and texture. But it would still have the same delicious flavor and antioxidant benefits as the original recipe.

A delicious and flavorful side dish!

Ingredients

  • One Cauliflower head
  • Extra Virgin Olive Oil or Avocado Oil
  • Kosher Salt and Pepper
  • Curry
  • Turmeric

Instructions

  1. Slice cauliflower into small "steaks" or chop it into pieces.
  2. Drizzle generously with EVOO or avocado oil.
  3. Sprinkle with kosher salt and pepper.
  4. Sprinkle with curry and turmeric.
  5. Spray with EVOO or avocado oil to coat evenly.
  6. Roast in a preheated oven at 450F until golden (turn once during cooking.)

Leftovers are GREAT gently reheated!
