How To Make White Chili Chicken (One of the Best Recipes You’ll Ever Make!)

This easy, super delicious four-ingredient white bean chili chicken in a slow cooker is one of the BEST chicken dishes you’ll ever put in your mouth.  With only four ingredients, you will definitely want to add this to the meal rotation!

This dish is so simple but so delicious. It is also packed with protein to keep you full. After a cold winter day, your family will love this warm meal for dinner and you will love just how easy it is to make.

This white bean chili chicken is literally my favorite recipe find for 2019!

Four ingredients. That’s right. FOUR. (Salt & pepper & olive oil spray are givens and never count; I use them for everything)

This dish is perfect in every way. 

Healthy. Low carb. High protein. 

And it takes 5 minutes to prep (at most). And 4-6 hours to slow cook. That’s. It.

Ingredients for White Chili Chicken

 

Boneless skinless chicken breasts

Boneless, skinless breasts are perfect for this recipe. I buy these every Tuesday at The Fresh Market here in Birmingham. If you buy large ones, simply cut them into smaller pieces that are uniform in size.

Canned White Beans

Canned white beans work beautifully for this dish. Cannellini (aka white kidney beans) or Northern beans are great. You can use one or two cans, depending on your preference. Drain the beans, but do not rinse

White Chili Seasoning Mix

In the grocery aisle where spices and mixes are found, you’ll find packets of chili mix, gravy mix, etc. The chili seasoning you want for this dish is WHITE CHILI mix. It may take a minute to find it (I had to look hard), but it should be there. McCormick makes it; that’s the brand I buy. You might also find a store brand (I think Publix has one) ~that’s fine, too.

Jarred Pepperoncini Peppers and Juice

This dish uses pepperoncini peppers, which I always keep in my pantry (unopened) or fridge (once opened). I use them in my Mississippi roast and in this dish. You’ll use half a jar for each dish unless you just want tons of peppers (or you double the chicken).  You’ll use the peppers and the juice. They give the dish a piquant tang that is fabulous.

Because I always use kosher salt, black pepper, and EVOO spray on my meat, I don’t count them as ingredients in this dish. But I do spray my breasts and season them with s & p before adding the other ingredients.

My Favorite Slow Cooker

You may use any slow cooker for this recipe, but I have a hands-down favorite~this stainless casserole crock pot. I use this for most of my slow cooker recipes like spaghetti sauce, this chili recipe, or smaller size recipes that don’t require a deep 6-quart slow cooker. In the main recipe photo for this post, the chicken is made in a regular slow cooker. In the videos, I am using a casserole crock pot.

Can you freeze white chicken chili?

Absolutely! Just like any other chili dish you can pop this chicken white chili in the freezer if you are going to wait a little while to eat it. If you are going to store this dish I recommend making sure it is in an airtight container. You can store it in the fridge for a few days, but if it’s any longer than that then you should make sure to freeze it. But since this dish is so delicious, I expect you won’t have many, if any, leftovers to store!

What goes well with white chicken chili?

A lot of things go super well with white chicken chili that you can serve in tandem. You can always serve some crackers, sliced bread, baked potatoes, or serve with veggies on the side. It is so yummy to have something to scoop this delicious chili on. The possibilities are endless! If you aren’t feeling a side, this dish is also perfectly yummy on its own.

What are good toppings with white chicken chili?

You can add your favorite chili toppings to this white chicken chili. For example, I like to add some shredded cheddar cheese and sour cream as my chili toppings. However, you can add whatever chili toppings you want to this dish. Regardless of toppings, it will be SO delicious and you will have to add it to your meal rotation.

Easy White Bean Chili Chicken in a Slow Cooker

Yield: 6
Prep Time: 5 minutes
Cook Time: 6 hours
Total Time: 6 hours 5 minutes

Easy & yummy chicken with pepperoncinis, white beans, and white taco seasoning.

Ingredients

  • 2-3 boneless skinless chicken breasts
  • 1-2 cans white beans (Cannellini or Northern)
  • 1 packet white chili seasoning mix
  • 1/2 jar pepperoncini peppers
  • 1/2 cup juice from pepperoncini peppers

Instructions

  1. Cut chicken into small uniform pieces.
  2. Spray chicken with EVOO spray; add salt & pepper to taste.
  3. Drain beans (do not rinse).
  4. Sprinkle beans over chicken.
  5. Sprinkle seasoning mix over beans and chicken.
  6. Pour juice and pepperoncini peppers over all.
  7. Cook on low 5-6 hours our until chicken is fork tender.
  8. Serve in fresh bowls with rice or tortilla chips, cheese, sour cream, fresh cilantro and other toppings.

Notes

You can eat the peppers or discard them. Be sure to add the 1/2 cup of juice from the pepperoncini peppers.

These make delicious, hearty bowls! You can use rice, tortilla chips, pico de gallo, diced onion, fresh cilantro, corn, sour cream, lettuce....anything you like.

  1. Hi Jamie! I’ve not tried it this way but see no reason why it shouldn’t work. You might google oven temps for slow cooker substituions. I am thinking maybe 250 F ? Covered the whole time~maybe 3 hours? Just make sure chicken is at 165 degrees F when done cooking. I’d also leave it covered after cooking for an hour or two for it to “rest.” Let us hear back what you do and how it turn out!!! XoXo
