This feta black bean dip is the perfect summer appetizer~easy, make-ahead, and super delicious!
My friend Jean Anne served this yummy dip at a cookout several years ago, and everyone there raved about it! She served it with Fritos scoops, and it was SO delicious~salty, slightly sweet, crunchy, and tangy. This dip is so perfect to serve at an outdoor barbecue, cookout or picnic. I’ve never served it that someone didn’t ask for the recipe!
I also found this feta dip in featured in A Thyme to Celebrate, a cookbook of the Junior League of Tallahassee, Florida. I love finding fabulous classic cookbooks that can be snagged for a few dollars on amazon. I don’t mind used ones at all; in fact, often the used ones have the best recipes already marked!
Make Ahead: This dip is best if made several hours before serving, as it needs a bit of time for the flavors to blend and for it to chill. It tastes great the next day, so I often double the recipe so that we can enjoy leftovers during the week.
