All you need is a slow cooker and 3 ingredients (plus chicken) to make this fresh & healthy salsa taco shredded chicken for bowls, burritos & beyond.
This fresh, healthy, absolutely delicious salsa taco chicken is one of the easiest, most budget savvy, and versatile uses for boneless skinless breasts. Since Tuesday is when I buy these on sale (at The Fresh Market), I decided to repost this oldie but goodie.
If you live near The Fresh Market you surely know about the fabulous Tuesday “chuck & chicken” deal~$2.99 per pound. I am a huge Fresh shopper and buy chicken almost every week. This recipe is one I use most often, as it is healthy and so versatile.
The internet is replete with salsa chicken recipes; mine is a smidge different from some in that I use 2 salsas (red and green) as well as a specific taco seasoning. But feel free to tweak it using what you have (or your favorite brands). It is just good no matter how you make it!
The Casserole Crock Pot: I use my casserole crock pot because it spaces the breasts evenly and cooks more quickly than a deep crock. When I was searching casserole crock pots (pictured below), I found that my stainless white one is on sale at Crock Pot for $25 which is FAB! I am actually buying a few for wedding gifts. Because I use ebates for online shopping, I also get 4% back on the purchase.
The Two Salsas: I always use a red salsa and a green (verde), usually Trader Joe’s (but anything works). The amount is variable based on how many breasts; I usually use a cup of each salsa.
The Taco Seasoning: Penzey’s has wonderful taco seasonings; I buy the regular, bold, and chicken taco seasonings to keep on hand for this recipe and others calling for taco seasoning. Because it is more expensive than store bought brands, I sometimes use 1/2 Penzeys and 1/2 McCormick’s with great results.
Bowls, Burritos and Beyond: When I make this, we use it for bowls (rice, black or pinto beans, chopped peppers, tomatoes, etc…), burritos, nachos, tacos, or any way that works based on what we have on hand. I’ve used leftovers in this Jason’s Deli Fire Roasted Copycat Tortilla Soup and this Southwest Chicken Tortilla Soup.
A Savvy Side Sauce for this Chicken: A must-have for this chicken or any taco or Tex-Mex meal is this Chuy’s Jalapeno Ranch Dip. It tastes just like the Chuy’s version and is a great dip for chips. We drizzle it over taco salad or serve in small bowls for fajitas. It makes a huge amount and keeps well for up to a week in the fridge.
