Honey bun cake is one of the yummiest~and easiest~cakes you’ll ever make. Tastes like a giant honey bun or cinnamon roll!

This recipe has been around forever, but I made it for the first time this week. I left it on the counter, cut into squares, for my family to eat as they came and went. Every single one of them commented on this cake. My husband said it was the best thing he’d ever eaten (although he says this about a lot of things:-) and that it was “sinful!” It certainly is not for the calorie conscious!

I made this in a 9 x 13 glass baking dish lined with parchment. Parchment makes it easy to lift baked goods from the pan before glazing, and cutting into perfect squares is much easier.

This would be wonderful to take to a brunch instead of coffee cake. It is much easier to cut into pretty squares after the glaze is completely hardened~after at least an hour.

Ingredients

  • FOR CAKE:
  • 1 box butter recipe golden cake mix
  • 4 eggs
  • 1 cup sour cream
  • 3/4 cup canola or vegetable oil
  • FOR SUGAR MIXTURE:
  • 1 cup brown sugar
  • 1 TB cinnamon
  • 1/3 cup pecans (optional)
  • FOR GLAZE:
  • 2 cups powdered sugar
  • 2 TB milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325 degrees.
  2. Line 9 x 13 dish with parchment; spray with cooking spray.
  3. FOR CAKE:
  4. In medium bowl, whisk eggs, oil & sour cream until well blended.
  5. Add cake mix, stirring with spatula until most lumps are gone; set aside.
  6. FOR SUGAR MIXTURE:
  7. In small bowl, mix brown sugar, cinnamon & pecans.
  8. Mix well.
  9. In prepared pan, pour half of cake batter.
  10. Sprinkle all of sugar mixture on top of cake layer.
  11. Pour rest of cake batter into pan, spreading to cover streusel layer.
  12. Swirl a knife through batter to mix sugar throughout.
  13. Bake until just done~approximately 40 minutes.
  14. FOR GLAZE:
  15. Mix powdered sugar, milk & vanilla until smooth.
  16. When cake is done, allow to cool for 10 minutes.
  17. Remove cake from pan by lifting edges of parchment.
  18. Pour glaze over cake, spreading with a knife or spatula.
  19. Allow to cool or "set" for an hour for best texture.
