This no-peel potato casserole is perfect when you need an easy and convenient meal. While fresh ingredients are usually ideal, sometimes it isn’t doable. For those moments, try this delicious and easy-to-make dish!

This recipe is SO easy and adds some cozy comfort for a cold winter night. With only a few ingredients, this dish can be done in an instant with ingredients that you already have on hand. During my kitchen renovation, I didn’t have access to a full kitchen. This got me thinking, “How can I create yummy food that is convenient?” This casserole is just that convenient AND yummy. Your friends and family will love this loaded baked potato casserole in one pan, so give it a try!

What kinds of toppings can I add to a no-peel potato casserole?

There are so many toppings that you can add to this casserole! This dish is completely customizable to what you like on your loaded baked potato. My favorite toppings for this dish are sour cream, shredded mozzarella, salt, pepper, garlic salt, and bacon bits. You can add whatever you want! Some other toppings to consider would be cheddar cheese, green onion, jalapenos, and other vegetables. Add your toppings of choice to the potatoes, mix it all up and then bake it in the oven. Unlike a typical baked potato, all of your toppings are already baked into the dish. Yum!

What goes well with potato casserole?

I would recommend serving this no-peel potato casserole with a protein of some kind. Since this dish has starch from the potato, it pairs really well with meat. I would recommend roasted chicken or grilled red meat. This casserole is wonderful as an appetizer or side dish to a delicious meal. But since it is pretty filling, it can work as a main dish with the right toppings! This casserole is also a good option if you need to bring a quick side dish to a holiday party. Your friends and family will love it and it is SO easy to make. 

How do I know when to take it out of the oven?

You will know when to take it out of the oven because it will turn golden brown on top. The main goal of this dish being in the oven is to be heated thoroughly. So as long as you make sure it is heated all the way throughout and has started to brown on the top, then it should be ready to serve! Let it cool down for a few minutes after removing it from the oven, then serve and enjoy!

How much butter should I add to this dish?

How much butter you add depends on how much you like butter. If you normally slather your potatoes with butter then I would recommend adding about a stick of butter to the warm potatoes. For those who aren’t as big butter fans, I would recommend adding in half of a stick or less. Like many of the other ingredients in this dish, you can add as much or as little as you want. The beauty of the convenience of this dish is that it is so versatile and easily customizable. 

What are some other easy-to-make, convenient dishes?

Delicious dishes don’t always have to be complicated. While fresh is usually best, oftentimes we need a quick solution for dinner when our days are just too busy. Absolutely! As always, make sure it is in an airtight container and reheat fully when you are ready to eat it. You can also store it in the fridge for a few days if an airtight container and kept cool. All you need to do to reheat it is to just pop it back into the oven for a while until heated thoroughly.

Ingredients

  • 2 packs of Simply Potatoes mashed potatoes
  • ~ 1/2-1 stick of butter
  • Sour cream
  • Shredded mozzarella
  • Salt & pepper
  • Garlic salt
  • Bacon bits

Instructions

  1. Use two packs of Simply Potatoes mashed potatoes (microwave and heat them thoroughly until very hot)
  2. Add as much or as little butter as you like. If you want a lot of butter, add a stick or half.
  3. Add whatever toppings you want! Think of it like making a casserole dish. For me, I added sour cream, shredded mozzarella, salt, pepper, garlic salt, and bacon bits.
  4. Bake until everything is heated through and slightly browned. Then enjoy!
