Italian Chicken Tomato Soup
This Italian chicken tomato soup is a healthy but hearty soup that is slow cooker easy, Paleo friendly, and surprisingly yummy.
This Italian chicken tomato soup is one of the few paleo recipes that I really find delicious. It gets a spicy kick from ranch dressing mix, which I use often to season meat and veggies for soup.
This soup calls for full fat coconut milk, which is the common dairy replacement on the Paleo diet. I worried that I would taste the coconut, but it really isn’t perceptible at all. As for the “full fat,” that doesn’t bother me either. I actually add coconut oil to my coffee every morning, as there are myriad health benefits to the type of fat found in coconuts.
