Mitt Romney’s favorite meatloaf makes individual servings of meat baked and basted with a sweet & tangy sauce that is outstanding.
Several years ago, Ann Romney shared this recipe on an episode of Rachel Ray. She told the audience that the meatloaf, served with roasted vegetables, was his favorite meal.
I sligthly adapted her meatloaf recipe, and my family loves it. Everyone loves getting his or her own mini meatloaf. Because the loaves are small, they cook more quickly and look more appetizing (in my opinion) than a sliced piece.
Make Ahead: These meatloaves are easy to make ahead and freeze. I make the up to the point of baking, and freeze them uncooked. When we want meatloaf, I pull the loaves out and bake per recipe instructions.
A note on freezing: So that the loaves won’t stick together when frozen, place shaped, unbaked loaves on a cookie sheet and place in the freezer for about an hour (this is like “flash freezing”). Then wrap in a freezer bag and pull out individual loaves as needed.
