My friend Debra makes this beautiful, absolutely delicious mixed greens salad with strawberries, glazed nuts & Gorgonzola every time we have a meal together. It is famous for a reason!

My sweet friend Debra is famous for her lovely art (read about it in this post), but also for this mixed greens salad with strawberries, glazed nuts & gorgonsola. She is known for this salad in our circles, and everyone loves it. When salad is on the menu, we ask Deb to bring this one.

This salad is beautiful. Green lettuces…..bright red strawberries…..orange mandarins…..red craisins…..blue berries (optional)….A white bowl makes all the colors pop with luscious color. This salad truly makes a lovely presentation.

Be warned: this salad is expensive, especially if making for a large group. Glazed nuts cost a pretty penny (or you can save by making your own; here is my recipe). Baked parmesan crisps are costly if bought at the grocery; Costco sells the same ones in a big bag at huge savings. Fresh berries can add up but are so worth it. Despite the cost, this salad is worth it, and it is healthy to boot!

Dressing: We alternate between making the Good Season’s Greek dressing (per package instructions) and using the bottled Ken’s Steakhouse Lite Walnut Raspberry Vinaigrette (in the dressing aisle). The former is zesty; the latter is sweet. We typically set bottles of both dressings out and allow guests to choose:-)

Gorgonzola or blue cheese work beautifully with this salad to offset the sweetness of the fruit. Use either with great results!

Mixed Greens Salad with Strawberries, Glazed Nuts & Gorgonzola

Ingredients

  • 2-3 bags mixed field greens
  • 1-2 cartons strawberries, sliced
  • 1 cup glazed pecans or walnuts
  • 3/4 cup craisins
  • 3/4 cup baked parmesan crisps
  • 1-2 cans mandarins, drained well
  • 1 cup gorgonzola (blue cheese works well)
  • Ken's Steakhouse raspberry walnut vinaigrette

Instructions

  1. Layer greens in salad bowl.
  2. Top with sliced berries and oranges.
  3. Sprinkle nuts, crisps, and craisins on salad.
  4. Top with gorgonzola.
  5. Toss just before serving.
  6. Dress with raspberry vinaigrette or Good Season's Greek.

  1. Hi Jeannie, baked parmesan crisps are basically nuggets of parmesan cheese that have been baked into crouton like crispy bites. Costco and most grocery stores sell “Wisps” which are basically parmesan crisps. They are usually found in bags in the deli section or near the salad dressings. They are delicious and have few to no carbs.
