What is better on a winter day than a delicious and filling soup? Homemade broccoli cheddar soup is even better than Panera, and is SO easy to make!
This broccoli cheddar soup recipe is perfect for a low-maintenance dinner that will satisfy the whole family! In addition to the pre-made soup mix, you only need a few additional ingredients for the whole entire meal. Without a doubt, this quick, easy, and delicious recipe is a whole package!
Why use pre-made soup mix?
Bear Creek cheddar broccoli soup mix adds thickness and a lot of flavor to the soup. Not only is the Bear Creek soup mix amazing, but it is also super cheap for a total of 8 servings that the bag has. This meal is incredibly affordable to make, especially compared to how much just one bowl of broccoli cheddar soup is from Panera. Using mix instead of making the soup from scratch, makes this a super easy meal to prepare.
How can you add more protein to your Broccoli Cheddar soup?
One way you can add more protein into this soup is if you use bone broth instead of chicken broth. This alternative has much more protein than your traditional chicken broth. If you are wanting a meal that has a higher protein content, definitely substitute the chicken broth for bone broth. You could also add in grilled chicken (or meat of choice) to also boost the protein content. Certainly, you are going to LOVE this soup!
When should the broccoli be added to the soup?
Your chopped broccoli should be added in after the soup has simmered for 8 minutes. For the best consistency, add in the broccoli right before serving it. This prevents the broccoli from being soggy and too overcooked. Make sure to chop up the broccoli finely, it adds color and taste to the soup!
How can you keep the soup from getting grainy or curdling?
One way you can keep the soup from being grainy is by whisking it very well. It is best to whisk it right when you add in the mix to the broth, milk, and water. By whisking it well, you can avoid the graininess or any of the clumps that might form. To keep the soup from curdling, you want to carefully watch the heat while you are cooking. If the soup gets above a simmer for the cooking time, it might curdle and create a less than desirable consistency.
What are the benefits of broccoli?
Broccoli is high in so many good vitamins and antioxidants. It adds a good dose of fiber as well as vitamin C, potassium, and iron. In addition to this, broccoli also has more protein than other vegetables traditionally. A lot of people are not the biggest fans of broccoli, so adding it into a delicious soup like this is a great way to get these awesome greens in.
