One way you can add more protein into this soup is if you use bone broth instead of chicken broth. This alternative has much more protein than your traditional chicken broth. If you are wanting a meal that has a higher protein content, definitely substitute the chicken broth for bone broth. You could also add in grilled chicken (or meat of choice) to also boost the protein content. Certainly, you are going to LOVE this soup!

When should the broccoli be added to the soup?

Your chopped broccoli should be added in after the soup has simmered for 8 minutes. For the best consistency, add in the broccoli right before serving it. This prevents the broccoli from being soggy and too overcooked. Make sure to chop up the broccoli finely, it adds color and taste to the soup!

Broccoli Cheddar Soup

A delicious and hearty soup, perfect for any winter day!

Ingredients

  • 1 package Bear Creek Foods Broccoli Cheddar Soup Mix
  • 2 cups Chicken broth
  • 2 cups water
  • 1 cup broccoli (chopped into small pieces)
  • 2 cups milk

Instructions

  1. In a medium saucepan bring broth, water, and milk to low boil.
  2. Add soup mix.
  3. Blend soup in well with a wire whisk, reduce to simmer.
  4. Simmer on low for 8 minutes.
  5. Add 1 cup of finely chopped broccoli.
  6. Stir broccoli into soup.
  7. Serve it warm!

Notes

Using the water, milk, broth trio gives more flavor than water alone.

Using bone broth would add protein

Make sure the broccoli is finely chopped- it adds color and tons of vitamins and antioxidants

For added fun, serve in a bread bowl!
