This Easy Cheddar, Green Onion & Olive Dip is Surprisingly Yummy

My friend Marie shares the recipe for this easy cheddar, green onion and olive dip that is unique, yummy, and perfect for tailgates or parties.

This dip is a hidden gem.

This dip is truly unique. Unlike many recipes, it won’t be replicated all over Pinterest or found in a google search. I love finding these one-of-a-kind recipes, and I am so thankful that my sweet friend shared it with me (and allowed me to share with you, my readers:-). There aren’t many recipes that aren’t “all over the internet,” so when you find one, you might want to bookmark it.  I have several in my arsenal. One is this strawberry nut bread and these grilled turkey mignons (pardon the photography; I posted this long ago before the kitchen update lol). Both are old, family recipes that aren’t easy to find, and both are absolutely DELICIOUS!

Don’t judge the recipe by its ingredients.

My friend Marie shared this recipe with me; it is a family favorite that she has been making for 20 + years. When she shared it with me, she warned that the list of ingredients might belie the actual deliciousness of the recipe (especially to those non-olive fans). But as she explained, everything just comes together perfectly and makes a delicious party dip. I can attest to this now that I have tried it myself.

Green olives + green onions? Yes, please!

Green olives and green onions each comprise a layer of this dip. If you think this can’t be yummy, think again. I am not a huge fan of green olives, but they are delicious in this dip. You really don’t taste the olives; they just add a salty, briny character to the mix.  The delicate green onions add the perfect touch and also a light, fresh flavor. 

Tips for taking this dip from “good” to “best.”

Here are a few tips for making this dip look and taste its very best. 

  1. Use regular cream cheese.
  2. Do not drain Rotel.
  3. Finely chop the green olives and green onions into tiny, uniform pieces.
  4. Grate or shred sharp cheddar from a block. Don’t use pre-shredded.

This is a perfect make-ahead party dip.

This dip can be made a day or two ahead and kept in the fridge until time to serve. Mix the cream cheese & Rotel base; refrigerate. Chop/dice olives and green onions; refrigerate. Leave in separate containers and assemble before serving. You can also make all the layers except the cheddar (on top). That is best added right before serving.

How to serve this dip.

This dip pairs perfectly with tortillas, and blue ones are particularly yummy with it. We served this dip today with regular Tostitos and blue tortilla chips; hands down the blue ones won (in my opinion). Although I didn’t try it, I would think pita chips would also pair well with this.  In the photo below, I have a blue tortilla loaded with this yummy dip lol.

Easy Cheddar, Green Onion & Olive Dip

Marie's unique and yummy dip that she makes for every tailgate!

Ingredients

  • 2 (8-oz) packages cream cheese, softened
  • 1 can Rotel (do not drain)
  • 1 (6-oz) jar green olives (sliced with pimento)
  • 1 bunch green onions
  • 1 (8-oz) block sharp or extra sharp cheddar

Instructions

Prepare ingredients.

  1. Mix cream cheese and Rotel (undrained) until smooth and creamy. Refrigerate to firm up (while prepping other ingredients).
  2. Finely dice green onions (white and green parts).
  3. Finely chop/dice olives.
  4. Grate or shred cheese (by hand or with a food processor).

Layer ingredients.

  1. Spread cream cheese mixture on the bottom of quiche dish or medium glass or baking dish with a lip (or short sides).

2. Sprinkle green olives over cream cheese mixture.

3. Sprinkle green onions over green olives.

4. Sprinkle cheddar on top.

5. Serve with tortillas.

  1. I was searching for a quick dip recipe to take to a party when I found this. While I love all olives, i know some people would never try this if they knew it had green olives. I mixed it with a hand mixer, and a food processor would make it much smoother. It wasn’t quite firm enough due to my limited time for chilling, so I should have only used half the Rotel liquid. The next day it was perfect. Chopping the olives so finely makes them practically undetectable, but the flavor is addictive. I’ll be making this often.
