Easy and Delicious Vegetable Quesadillas

Sometimes you just need an easy, quick, delicious meal that can be made in no time with little-to-no effort. Luckily, I have got you covered with these vegetable quesadillas!

What type of tortilla should I use?

My go-to tortilla is a La Banderita or a Mission Carb Conscious tortilla. These lower-carb tortillas taste almost exactly the same all the while being better for you. If you haven’t tried these tortillas before, I highly recommend them! But if you already have regular tortillas, those work just as well for this recipe. 

What vegetables go in vegetable quesadillas?

There are so many delicious veggies that you can add to your quesadilla, but I am going to recommend my favorite blend of veggies that makes this meal SO delicious. I add sliced bell peppers and onions to the pan with a little bit of extra virgin olive oil. A fun veggie to add to this recipe is a jalapeno, it adds some more spice and extra flavor to this quesadilla. I also like to add some spinach to the pan once the other veggies have mostly cooked. Adding some sauteed spinach to your quesadilla adds a lot of delicious nutrients to your meal.

Here are a few tips for handling jalapenos:

First, make sure you de-seed the jalapeno before you add it to the quesadilla, if you don’t, it will be way too spicy. Secondly, make sure to be careful with the jalapeno when you handle it. If you aren’t careful you could cause your hands or face to burn from the heat. 

What should I serve with vegetable quesadillas?

There are so many good toppings to add to vegetable quesadillas. One of my favorites is to add a scoop of guacamole to eat with it. Some of the other toppings you can add are queso, salsa, or sour cream. You can also add a combination of any of the mentioned items! Having something to dip your quesadillas in brings them to a whole new level. 

How can I add some more protein to this dish?

An easy and fast way to add some more protein to this dish is by adding some leftover meat. The first protein that I would recommend would be chicken. If you have some already cooked chicken, you can either shred or slice it and then add it to your quesadilla with all of the veggies. This keeps the recipe a quick and easy one while also adding some high protein for when you need it. 

What type of cheese should I use?

My favorite cheese to use in my veggie quesadillas is pepper jack cheese. Pepperjack cheese adds a little bit more fun to this quesadilla; however, you can use any cheese you like. For this dish, I recommend using shredded cheese. Using shredded cheese instead of slices will help to get all of the cheese melted evenly. 

How do I tell when the quesadilla is done cooking?

One way to tell when your quesadilla is done cooking is by watching it closely and seeing when the tortilla begins to brown and the cheese on the inside is melted. But be careful when making this dish because if you have the heat on too high then you will brown the tortilla before everything on the inside is warm and melted. To keep this from happening I suggest cooking the quesadilla on medium heat and monitoring it until it browns on the outside and is all melty and delicious on the inside.

Ingredients

  • Bell pepper
  • Onion
  • Jalapeno
  • Spinach
  • EVOO
  • Salt and Pepper
  • Tajin
  • Shredded Cheese

Instructions

    1️Chop a pepper, onion, and if desired a jalapeño (deseed first)
    2️Sauté in extra virgin olive oil and season w/ kosher salt, pepper, and if desired a fajita or chili lime seasoning
    3️Get a flour tortilla (I love La Banderita or Mission Carb Conscious because you can't tell the difference between those and regular)
    4️Spray EVOO in skillet; add tortilla. On one side, place veggies along with shredded cheese (pepper jack is FAB)
    5️Fold tortilla; turn and sauté until both sides are golden

    Once it's finished, add toppings and enjoy!
