❤️HOW TO MAKE CARAMELIZED ONIONS:
Ingredients
1️⃣3-5 yellow, sweet, or Vidalia onions
2️⃣2 tablespoons olive oil or unsalted butter
3️⃣pinch of salt
4️⃣1/4 c water

Instructions
1️⃣Slice onions thinly & cut slices in half. Sprinkle with salt.
2️⃣Melt butter or EVOO; add onions
3️⃣Cook on medium, add water, and put lid on top to steam for 15 min
4️⃣Uncover & continue cooking, stirring, and scraping brown bits until onions are caramelized.

For making flatbread pizza with caramelized onions, I brush the bread with extra virgin olive oil. Then I spread onions on top & add Gruyere cheese with a little drizzle of hot honey.😍SO delicious!

Here is the story of how Tucker (who is a Family Savvy fan favorite😂) and I came to be.

When I lost my beloved Goldendoodle named Cam, I grieved so deeply that I thought I’d never be able to love another dog again. Then, a friend of my daughters had a gorgeous Goldendoodle that I asked to take care of to “test drive” having a new pet. I enjoyed him so much that I knew I had to get one that looked just like that dog, so I searched for one.☺️

Zane picked Tucker from a puppy lineup because he lifted his tiny paw at the camera, and Zane said, “This one has spunk.”😂Little did we know! Truer words have NEVER been spoken!
.
Now, Tucker is my sidekick, and unlike Cam (who went absolutely EVERYWHERE with me, even to go shopping), Tucker is a bit rowdy. But, I love his friendly, hilarious spirit!😉
.
We all tend to outlive our pets, so the best thing to do is to love them well, grieve as best you can, and then open your heart to love again. It’s worth it. It’s just how life goes when you give your heart to a dog!🐶
.

Viral Small Group Salad!

I’m finally sharing the recipe for the salad that went “viral” in our small group last week!!! I shared it on my stories, and so many of you are asking for deets, so here goes!👏👏👏

The salad is super simple to put together, but the combination of ingredients is uniquely yummy!! Here’s the cast of characters:
🐩
Spring Mix (I used 1/2 SM 1/2 baby spinach)
Halved cherry tomatoes
Diced cucumbers (I peel mine)
Chopped purple onion
Chickpeas (I sautéed mine in EVOO until golden)
Sliced or diced Kalamata olives
Quinoa (I got from @publix salad bar)
Crumbled feta
Greek vinaigrette
Drizzle of Balsamic Glaze (I forgot to add)
