This Broccoli Craisin Salad is my copycat of Ashley Mac’s Broccoli Craisin Slaw, and it is absolutely delish!
I’ve had myriad versions of broccoli salad, and this is hands down my favorite. It is a tweaked version of Ashley Mac’s Craisin Broccoli Slaw, a favorite side of many of us who love dining at Ashley Mac’s.
Many broccoli salads boast a large amount of crumbled bacon and shredded cheddar cheese. Not this version. It is primarily chopped broccoli & onion livened up with sugar glazed nuts, tart cranberries, and a sweet & tangy dressing that takes it over the top.
To make a slaw version similar to Ashley Mac’s, simply substitute packaged broccoli slaw for the chopped broccoli. Kale would also be a nice addition to the salad version, and I plan to try that soon. Will post my thoughts!:-)
Glazed nuts: You can buy glazed nuts most anywhere now, but they tend to be expensive and in small packages. I prefer making my own and storing them in an airtight container in the pantry or freezer to pull out as needed. I just buy larger bags of nuts (Costco and Trader Joe’s have bulk nuts) and glaze them at home. I have 3 easy ways to glaze nuts: 1) an oven method, 2) a skillet method, and a 3) a slow cooker method. Click on any of those to see how simple it is to make these yummy nuggets in your own kitchen for far less than you would spend on store bought.
The best thing about this broccoli salad is its fresh flavor and perfect combination of sweet, tangy & crunchy texture and taste. It truly hits the taste buds at every angle. Every time that I make this, I end up eating a bowl before I even get this in the fridge to chill. It is SO crunchy and delicious!
A similar salad that you may also want to try is my Chick-Fil-A Superfood Salad Copycat Recipe. If you love the Chick version, you will definitely want to bookmark this recipe. It tastes almost identical!
Make Ahead: This is best freshly made and after about two to three hours in the fridge. It gets softer each subsequent day in the fridge, and I think it is best within 24 hours of making and chilling.
We really love this salad, and I know your family will love it, too. If you try it, please let me hear your thoughts! As always, thanks so much for stopping by. Be blessed, and stay savvy!!!
