I’ve had myriad versions of broccoli salad, and this is hands down my favorite. It is a tweaked version of Ashley Mac’s Craisin Broccoli Slaw, a favorite side of many of us who love dining at Ashley Mac’s.

Many broccoli salads boast a large amount of crumbled bacon and shredded cheddar cheese. Not this version. It is primarily chopped broccoli & onion livened up with sugar-glazed nuts, tart cranberries, and a sweet & tangy dressing that takes it over the top.

To make a slaw version similar to Ashley Mac’s, simply substitute packaged broccoli slaw for the chopped broccoli. Kale would also be a nice addition to the salad version, and I plan to try that soon. Will post my thoughts!:-)

Glazed nuts: You can buy glazed nuts at most grocery stores and specialty markets like Trader Joe’s. At the grocery store, you’ll find glazed nuts in the aisle with baking goods near the chocolate chips. You also can find them in the nut aisle. Trader Joe’s has a great selection. My favorite T.J.’s glazed nut blend is the sweet & spicy pecan.

The best thing about this broccoli salad is its fresh flavor and the perfect combination of sweet, tangy & crunchy texture and taste. It truly hits the taste buds at every angle. Every time that I make this, I end up eating a bowl before I even get this in the fridge to chill. It is SO crunchy and delicious!

Make-Ahead: This is best freshly made and after about two to three hours in the fridge. It gets softer each subsequent day in the fridge, and I think it is best within 24 hours of making and chilling.

My salad version of the yummy Broccoli Craisin Slaw served at Ashley Mac's!

Ingredients

  • SALAD::
  • 12 oz (1 head) broccoli, chopped into small pieces
  • 1/2 cup green onion (sliced) or red onion (chopped)
  • 1 cup dried cranberries
  • 1/2 cup glazed walnuts or almonds
  • DRESSING:
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon celery seed
  • Cracked black pepper

Instructions

  1. Combine broccoli, onion, cranberries, and walnuts/almonds in a medium bowl.
  2. Combine dressing ingredients in a jar.
  3. Shake dressing until completely blended or mix in a food processor.
  4. Pour over salad mixture; mix utnil salad is throroughly but lightly coated.
  5. Chill for 2-3 hours before serving.
