These Sheet Pan Fajitas Will Blow Your Mind

Is it easy to make sheet pan fajitas?

This recipe is SO easy to make since everything in this dish can be cooked together on a single sheet pan. Just add all your veggies and shrimp onto the pan with your desired seasonings, and that’s it! Once the vegetables and shrimp are cooked, all you have to do is throw the veggies and shrimp into a tortilla and top with your favorite toppings. 

For an even more convenient option, you can use frozen shrimp. I like to keep shrimp stocked in the freezer for an easy last-minute dinner option.

What seasonings do I need for sheet pan fajitas?

The fajitas are loaded with colorful, flavorful, and healthy vegetables. I love to use several colors (red, orange, yellow & green) of peppers for color. I chop a large onion, preferably yellow or Vidalia.  If I have a fresh jalapeno on hand, I will deseed it and chop it to go with the larger peppers. 

Extra virgin olive oil is healthy and delicious, so I toss all the vegetables in it before spreading on a baking sheet. To season the vegetables and shrimp, I like to use tajin, taco seasoning, kosher salt, and pepper. Two of my favorite taco seasonings are Siete and  DAK’s Spices Taco Knight seasoning. The Dak’s seasoning is salt-free, so I often use it with a smaller amount of regular taco seasoning to cut down on sodium.

What protein should I use in sheet pan fajitas?

When making sheet pan fajitas, I love using shrimp. I often use frozen shrimp (uncooked, peeled, tail-on). In a pinch, I have used Sea-Pak breaded shrimp with great results. When I use chicken, I cut it into small pieces to ensure that it will cook completely with the vegetables. I rarely use any beef for these, but flank or skirt steak is a great option.

What toppings should I add to my fajitas?

The best thing about sheet pan fajitas is that you can add whatever toppings you want! I typically choose sour cream, salsa, grated extra-sharp cheddar cheese, Cojita cheese, slaw, and fresh avocado. There are myriad ways to use this Tex-Mex blend besides fajitas! You can make a bowl (add rice or beans), soft tacos, or even loaded nachos. I’ve tried them all and have never been disappointed!
