These cauliflower cheese grits are a guilt free way to enjoy “cheese grits” without the dreaded carb overload. These cheese “grits” are not only delicious, but they are a great way to get the health benefits of cruciferous cauliflower.
Cauliflower is a miracle veggie of sorts, as it mimics high carb foods such as potatoes, grits, and rice if prepared properly. It really is amazing how yummy and “starch like” cauliflower can taste.
A stainless steel steamer basket makes it a breeze to steam a whole head of cauliflower in minutes. The extendable handle allows you to pull the steamed florets from the pan and sit on the countertop to cool and drain simultaneously. If you steam the cauliflower in your Instant Pot, you’ll want to use this steamer basket made for the IP.
If you are an Instant Pot lover like I am, you’ll need a steamer basket for many Instant Pot recipes. The little legs on the basket elevate food from the bottom of the pot, thus preventing scorching or burning.
Once cauliflower is steamed, it just takes a few minutes to turn the florets into “rice.” When this post was written more than a year ago, I used my food processor. Since then, I have purchased the Ninja Intellisense Kitchen System and use the food processor attachment for ricing the cauliflower.

Cheese: Parmesan is always in this dish, as I use it and paprika to make a golden, tangy, crispy crust on top. For the inside of the dish, I use cheddar and sometimes Gruyere (which is FAB). Since Gruyere can be a pain to grate, I often buy the shredded Swiss Gruyere from Trader Joe’s. It comes in a big bag and makes wonderful quiche, cheese grits, etc…
