A fab and super convenient Trader Joe’s ingredients and a cooking “trick of the trade” make this recipe literally the best (and easiest) lentil soup you’ll ever make.
This soup is so fresh, flavorful, and quick to put together, I feel confident in calling it the best and easiest lentil soup you’ll ever make. That is, IF you can get your hands on Trader Joe’s steamed lentils. If you can’t, well……you can make do, but it might not classify as easy:-)
This recipe was inspired by and adapted from this recipe from Cookie and Kate. If you can’t find the TJ’s lentils, you’l certainly get great results by following her recipe.
I make this in large batches so that we can reheat and enjoy the soup for several day. Because it has no meat or meat broth, it is a flavorful soup that absolutely fits the vegan guidelines.
This soup is so hearty and flavorful, even I, the meat lover of all meat lovers, could go vegan if all dishes were this yummy.
The lentils are hearty and filling, but if you want more of a meal, pair it with a soup or half sandwich. I also like to serve this with hummus, cucumbers and pita bread.
My soup “secret weapon” is an immersion blender. I am a big soup maker and couldn’t live without one of these. If you want, you can use a blender or Vita-Mix to puree soup as well. I link below to the most popular immersion blenders; I have this Kitchen-Aid in black; I wish I had the silver:-)
I hope you enjoy this lentil soup, and I hope you can find the Trader Joe’s lentils. For the record, they are out of these sometimes, so I grab several cartons when I find them. They are located in the refrigerated produce section, above the fruits and vegetables where you’ll find the edamame and similar legumes.
Note: The TJ’s steamed lentils are fully cooked and packaged in an airtight shrink wrap. They can be heated and eaten straight from the package or used for this soup or others. This is a TJ’s fab fave product of mine, and I highly recommend it:-)
