Simple and Scrumptious Ranch Parmesan-Crusted Chicken Recipe

Why does mayonnaise keep chicken so moist?
One simple ingredient to add flavor and keep chicken from drying out every time is mayo! Yep, you read that correctly, mayonnaise isn’t just for sandwiches and tuna salads. Oh no, it’s also great for creating juicy, tender chicken too.
Most recipes use butter or oil for cooking chicken, but mayo is the better fat option when it comes to moist chicken. While the chicken cooks, the chicken will absorb fat from the eggs and oil in the mayo. Keeping it moist while adding flavor.
Ingredients you’ll need-
- Chicken– I used boneless, skinless chicken breasts.
- Seasoning– Cajun seasoning (I used Daks no salt), ranch dressing mix, Italian seasoning, panko crumbs
- Parmesan Cheese– I like a freshly grated parmesan. Whatever you have on hand will work.
- Mayonnaise– Mayo, you could say is my secret ingredient… It makes it nice and juicy.
- Sweet Potatoes- Stuffed Sweet Potato Skins
- Vegetables: Broccolini
- Salad: Wedge
- Potatoes: No Peel Potato Casserole
- Green Beans: Green Beans with Shallots

Ranch Parmesan-Crusted Chicken
Ingredients
- 4 boneless, skinless chicken breasts trimmed of fat or 6 thin
- 1/2 tbs Cajun seasoning ( I used Daks no salt)
- Dash of salt & pepper
- 1/2 cup shredded Parmesan cheese
- 1/4 c ranch dressing mix
- 1 tsp Italian seasoning
- 1/2 c mayo (may use avocado mayo I used Dukes)
- 1 c panko crumbs
- Avocado spray to spray the pans
Instructions
- Lightly grease a 9x13" baking dish with avocado cooking spray.
- Arrange the chicken breasts in the prepared dish. Sprinkle with Salt & pepper.
- In a small mixing bowl, combine evenly mayonnaise, Parmesan cheese, Cajun seasoning, Italian seasoning, and ranch dressing.
- Add the mayo mixture by spoon fulls evenly over the chicken, then use a spatula to spread and cover the chicken completely with the mixture.
- Sprinkle panko crumbs over both sides of the chicken. Pat until they are thick on both sides. (Panko mixture makes the chicken super moist and tender).
- Bake the chicken at 375° for 25-30 minutes, or until a meat thermometer reads 165°.
- Remove the baking dish from the oven, and serve with your favorite side dishes.
